Recipe: Guilt-Free Sparkling Mango Basil Mojito Lemonade

Summer is always on my mind. And even if it's freezing or raining outside I'm dreaming of ice cream, popsicles and ice cold beverages.

Luckily for me, I caught the tail end of the summer season here in Colorado and I've definitely been enjoying the sun. Sun here in Boulder means hiking and visiting the Farmers' Market every Wednesday to pick up my favorite bread and all of the fresh squeezed juice I can drink.

Last week I had this amazing alcohol-free basil mojito lemonade and it was perfectly refreshing!

Back at home I loved my infuser and would make all sorts of mock-tails. The benefit being that I had full control over the ingredients and the sweetener. But with the move I wasn't able to bring my infuser and have been missing my homemade drinks.

After stretching out my lemonade over 2 days I decided it was time for me to figure out how to make my own. Luckily I did bring my Nutri Ninja so I'm able to blend ingredients for my drink.

Here's how I recreated my drink with a little extra bubbly!

Ingredients (2 servings)

  • Fresh Squeezed Lemonade (2 cups)

  • Fresh Mint Leaves (2 sprigs, extra for decoration)

  • Fresh Basil Leaves (2 leaves)

  • Lemon

  • Flavored Sparkling Water (I used Mango La Croix)

  • Ice Cubes

Instructions

  1. Thoroughly wash your mint and basil leaves.

  2. Add the leaves to the blender cup along with the lemonade. Squeeze in the juice of half a lemon.

  3. Mix until the leaves color the lemonade green.

  4. Remove blender top and add ice. I prefer not to blend the ice and instead shake it.

  5. Pour over ice and stir in sparkling water before serving for a nice bubbly taste.
  6. Optionally dress the glass with the extra mint and a lemon slice!
